So the new to me 2015 2500HD I just bought is tuned (DEF and EGR deleted and straight pipe exhaust), I’m not sure what time is on it. It does have a 5 position power selector knob. I am trying to find someone to hook their laptop up to it and tell me what tune is on it. But in the meantime my question is; if I’m towing do I use the tow button on the column?

I don't think hooking up a laptop is going to give you the tuner info. It will give you parameters on the tune(s) itself.
For tuner info, I'd look on the ECM for a sticker or somewhere in the engine compartment or drivers side door sill.
If you are towing you should always use the tow/haul mode to help protect the trans

Following - I’m curious if/how you’re able to determine your tune details. I always thought my truck was bone stock until I found a tune sticker in the drivers doorjamb. I have no selector installed anywhere though, so I’m not sure if mine was retuned and left as-is… or if it had a system that was removed.
The OP mentions a 5 position switch in the truck.
EFI live and a tunable DSP5 switch usually go hand in hand. I'm kinda guessing it's EFI live but there are backyard tuners who do their own stuff..
